Siniscola is a vocated area for the production of extra virgin olive oil, thanks to a territory with an ideal climate and draining soils with a calcareous composition.

Since ancient times, olives have been cultivated in Siniscola for the production of extra virgin olive oil. Plants could be found everywhere, and the mills of the time worked at full capacity when autumn approached, as the precious liquid was essential for the preparation of numerous daily meals as well as traditional sweets.

Although the numbers are not what they once were, numerous olive groves still adorn the Siniscola countryside, and two oil mills work during the season to mill the olives. The varieties present in the area consist mainly of the Bosana and the Nera di Gonnos, but the Semidana is also beginning to be increasingly common. Also present are some table varieties, also excellent quality.
